Inspired by the Mizudashi method, we combine hot and cold infusions to reveal the natural structure of tea. Depth, balance, length on the palate.
What is Tie Guan Yin?
Tie Guan Yin, the “Iron Goddess of Mercy,” is an oolong (wulong) born in the Anxi region of Fujian. It later took root in Taiwan, where the hills of Muzha, in Taipei, made it a style of its own: more oxidized than the Anxi version and slowly roasted. That roast brings the raw cacao and toasted notes, where an Anxi Tie Guan Yin stays greener and more floral.
- Origin: Muzha, Wenshan District, Taipei, Taiwan
- Family: oolong (wulong), between green and black tea
- Oxidation: about 25%
- Finish: slow roast over several days
- In the bottle: raw cacao, mandarin, bright citrus, red grape skin
